Novotel Sihanoukville is proud to partner with Chef Outta Water for an exclusive fundraising dinner bringing together chefs from the USA, Australia, Vietnam, and Cambodia.

This special evening will raise funds for SPOONS Cambodia, a Siem Reap-based culinary training school creating opportunities for the next generation of Cambodian hospitality professionals. To date, SPOONS has supported more than 600 graduates to build rewarding careers in the industry.

On 31 July 2026, join us for an unforgettable six-course dinner that celebrates the chefs’ diverse culinary experiences, Cambodia’s rich food heritage, and the vibrant flavours of the coast. Captivating live performances of traditional Khmer music and dance will celebrate Cambodia’s cultural heritage throughout the evening.

Meet the Chefs

Chris Holen | Astoria, Oregon, USA

Chef, restaurateur and co-founder of Chef Outta Water, Chris Holen brings more than two decades of experience in restaurants and culinary education. He has cooked at New York’s James Beard House, represented Oregon at the Great American Seafood Cook-off, and collaborated with chefs in 20 countries through Chef Outta Water.

Judyta Slupnicki | Auburn, South Australia

With more than 20 years of international culinary experience, Judyta has cooked, consulted and run restaurants across Australia, Europe and Asia. She is passionate about local, sustainable produce and now runs SheChef, a private catering service in South Australia’s Clare Valley.

Vu Tran | Ho Chi Minh City, Vietnam

Vu Tran is a medical nutrition chef, culinary educator and experienced food and beverage leader with a passion for mentoring future hospitality professionals. Founder of Bếp Kể Chuyện, an intimate omakase-style dining concept in Ho Chi Minh City, she brings together Vietnamese culinary traditions and storytelling to create thoughtful dining experiences.

Suban Luon | Sihanoukville, Cambodia

Executive Chef of Novotel Sihanoukville Holiday Resort, Chef Suban Luon brings more than 15 years of experience from leading hotels in Cambodia, France, China and the Caribbean. His inventive cuisine combines Khmer flavours and local ingredients with international techniques, shaped by a career that has included preparing menus for global leaders and VIP guests.

Mengly Mork | Siem Reap, Cambodia

Chef Mengly Mork is a culinary storyteller dedicated to preserving and reimagining Khmer food traditions through indigenous ingredients, fermentation and zero-waste gastronomy. Drawing on more than a decade of professional experience and the culinary knowledge passed down through his family, he creates dishes that honour Cambodia’s food heritage while looking towards its future.


The dinner is part of a larger program supported by the Australian Volunteers. Visiting chefs will work closely with SPOONS students and alumni, offering professional feedback and helping identify future training and development opportunities.

Novotel Sihanoukville has a longstanding relationship with SPOONS Cambodia, regularly welcoming students through internships and employing graduates. By joining us for this dinner, guests will enjoy a remarkable evening while helping create lasting opportunities for Cambodia’s future hospitality talent.
